Para aprovechar este corte de carne, un manjar. Codiciado por los asadores y cualquiera que guste comer un sobroso trozo de carne. Esta receta es para cuando hagamos un festejo o nos querramos dar un buen gusto.
Ingredientes: 1 colita de cuadril, sal gruesa, 2 zanahorias, 2 batatas, 6 cucharadas de azúcar, 6 cucharadas de agua, 1 puerro, 1 cebolla colorada, 1 pepino, 2 tomates, perejil fresco, 1 cucharada de aceto balsámico, 3 cucharadas de aceite, 1 cucharada de mostaza en polvo, sal, pimienta
Espolvorear la colita de cuadril con sal gruesa. Sellar en la plancha y terminar la cocción en el horno.
Calentar azúcar y agua hasta lograr un almÃbar con textura algo densa.
Cortar las zanahorias y las batatas en láminas finas, pasar por el almÃbar y secar en el horno a temperatura media. Deben quedar crujientes sin que se quemen. Salpimentar.
Picar finamente cebolla, puerro, tomate y pepino sin piel. Condimentar con aceto, perejil picado, mostaza, aceite, sal y pimienta.
Servir porciones de colita de cuadril y acompañar con zanahorias y batatas crocantes. Terminar con la salsa criolla.
